Simple Roasted Chicken

We tend to eat a lot of chicken. Nothing wrong with that, but I do get bored and have hard time coming up with good baked chicken recipes that aren't always breaded in the "flour mixture." This roasted chicken recipe is one of my new favorites! It is simple, super yummy, and I was able to make it using the "picnic pack" chicken package from the grocery store, which is usually always cheaper than regular boneless skinless chicken breasts.

Roasted Chicken

About 8 or so pieces of chicken (I used thighs and drumsticks)

2 Tb soy sauce

1 Tb brown sugar

2 Tb red wine vinegar

2 Tb olive oil

2 Tb onion, chopped

2 cloves garlic, minced

salt and pepper

parsley, for garnish


Preheat oven to 425.

Rinse chicken and get rid of any fat. Combine ingredients and toss with chicken. Season with salt and pepper and lay in a baking dish skin side up. Roast for 30 minutes. Flip and re-baste with marinade. Roast for another 10 minutes, or until chicken is cooked. Garnish with parsley.






The only change that I will make for next time is to set some marinade aside and thicken it up into a gravy/glaze type thing. 

Hubby's Rating: 4 Mmm's. Loved the flavor, would have liked a thicker sauce. Really liked this marinade on the drumsticks.
