Peanut Butter Chocolate Chip [Boxed] Banana Bread

I love to bake, but I don't love to measure out a bunch of ingredients. 

Cue the boxed mix -- a fabulous little present just waiting to be opened and dumped into a bowl!

Easy enough!

Sometimes, when I'm feeling adventurous, I like to add in some extra yumminess to take the boxed mix from good to delicious!

And that is exactly what happened when I added mashed banana, peanut butter, and chocolate chips to a boxed banana bread mix from Trader Joe's


Mix up the batter according to the instructions on the box. 


Mash the banana. Add to the batter. 


Add a 1/4 cup of peanut butter and a 1/2 cup of chocolate chips. Fold these items into the batter. 


Pour into a greased bread pan, sprinkle more chocolate chips on the top. Bake according to the instructions on the box. 


Let cool. Patience....


Slice and enjoy!

Sour Cream Banana Bread

My hubby LOVES banana bread! We receive a package from my Grandmother every few months with homemade banana bread, cookies and other special treats -- which last about 3 days flat in our house! I don't get around to baking very often, so when something sweet arrives wrapped perfectly with a hand penned note from my Grandmother we get a little CRAZY!

Last Wednesday we were planning on leaving the office early to play some golf, but it was pouring down rain! We decided to leave early anyway and work from home with the sound of the rain pounding on our roof. 

We got zero work done! Hubby took a cat nap and I decided to bake some banana bread, which made for a delightfully relaxing afternoon! 

I used a Martha Stewart recipe, which I modified just a bit by adding more bananas and extra spices!

Ingredients

1 stick butter
 2 large eggs
1 1/2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon salt
1.5 cups mashed bananas
1/2 cup sour cream
1 teaspoon vanilla
1/2 cup walnuts and another handful to sprinkle on top
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/8 teaspoon cloves


Preheat the oven to 350 degrees. 

With an electric mixer, cream the butter and sugar. Add the eggs to the butter/sugar and mix with electric mixer. 

In a separate bowl, mix the flour, baking soda, salt, and spices together with a spoon. Add the dry ingredients to the butter/sugar/egg mixture. 

Add the mashed bananas, sour cream, and vanilla. Mix together with the electric mixer. Do not over mix. 

Fold in the walnuts. 

Pour the batter into your bread pan and sprinkle with more walnuts. 

Bake for 75 minutes.

Hubby grew a little impatient and decided the bread had cooled sufficiently to be taken out of the pan! He lost a chunk of the top and a bit off the bottom, but he was super happy with his rainy day treat!
