Easiest Cobbler Recipe Ever

We were having some of the youth mentors over to our house for one of our monthly meetings. I had been so focused on dinner all day (not to mention, my forgetfulness because of my pregnancy brain), I completely forgot about dessert. I had originally thought to make an apple tart, but quickly nixed that idea when I realized I didn't have enough apples and whenever I have to make a crust I also make a huge mess and I had literally just cleaned the kitchen that morning (which is a big deal when your pregnant and exhausted). 

I looked in my freezer and saw that I had a package of frozen mixed berries from Sprouts!!! Cobbler Time!!! Cobbler is one of my favorites to begin with but I recently came across the Pioneer Woman's Blackberry Cobbler. It is oh so simple (like really really really simple!). It just amazes me how easy this cobbler is to make and how delicious it is!  I have used this recipe with just blackberries before, apricots, peaches and now a frozen mixed berry mix. 


So find 2 cups of fruit and lets make some dessert!!!!


Ingredients:

1 stick butter
1 1/4 cup sugar
1 cup flour (All Purpose)
1 cup milk
2 cups fruit (fresh or frozen)



Preheat oven to 350.
Melt butter in a small bowl
Combine and mix 1 cup sugar and flour. Whisk in the milk and the butter.
Pour mixture into a buttered baking dish (I like using either an 8x8 or 7x11 glass dish)
Sprinkle your fruit evenly over mixture. Top with 1/4 cup sugar and bake for 50-60 minutes!

Cool for at least 10 minutes. And serve with some vanilla ice cream :)


How simple is that. Next time you want to make a dessert but don't really want to "do" anything, whip this yummy deliciousness together and enjoy!
