Fondue For a Crowd

I love chocolate...I mean really who doesn't?! We are doing this new thing with our youth group and have broken up into 3 different "small groups" all focused on something different. One of our groups is focusing on current events. The second group is diving into relationships and my group (which I get to lead with my cute hubby) is all baking....just kidding, we make a treat as a group while doing a little devotional. 

This past Wednesday was our first official night and we started it off with some Chocolate Fondue

I wanted to keep it simple, semi healthy, and something where everyone could participate in creating.  This would be perfect to have your own little DIY fondue party! (BringYourOwnDippers)


Chocolate Fondue (for a crowd= approx. 10-12) 

12 oz chocolate chips
2/3 + 2 TB half and half

Heat the above ingredients in a small pot and pour into a serving bowl or into a fondue pot.

Serve with dippers (strawberries, bananas, pretzels, brownie bites, marshmallows, etc.) and ENJOY!!!!

The youth loved getting to help cut up the fruit and talk about their days while prepping. 


Not only is this a simple dessert that can be thrown together really quickly but I think it can be pretty fancy with the right dippers too!

Reese's Chewy Chocolate Cookies

This past weekend, the hubby and I went up to Chico to visit his parents.  It is always a fun and crazy time when we are all together. Not to mention that he has a very large family that is always growing! I mean always! Another baby is coming into the family in October!!!!


We also had the wonderful oportunity to see his youngest sister play Snow White in her ballet performance. She was amazing! Plus, they had little little girls dancing too! My sister in-law and I were crying from laughing so hard at those cuties!!! I can't wait to put Hailey in dance!

Oh and of course I can't forget about Father's Day! It was the hubby's first Father's day!!! It was so sweet to watch him on his special day with our little girl!


Alright, enough about my weekend, let's get to the chocolate! My hubby's Aunt actually made these this past weekend for a picnic lunch we had at Bidwell Park! I ate probably about 5. In one sitting. Most likely, in less than 10 minutes. I am not ashamed! So I asked for the recipe and can actually be found on the back of the Reese's Peanut Butter Chips bag that you will use in the recipe! Super super simple!

Ingredients


2 cups flour

3/4 cups Cocoa Powder
1 tsp. baking soda
1/2 tsp. salt
2 1/2 sticks butter
2 cups sugar
2 eggs
2 tsp. vanilla extract
1 pkg Reese's Peanut Butter Chips (approx. 1 2/3 cups)



Preheat Oven 350

Combine dry ingredients in a medium bowl.

Combine wet ingredients in a large mixing bowl. Once fully combined, slowly incorporate dry ingredients into wet. Once all mixed, add in chips.

Bake 8-9 minutes (cookies will be soft. Make sure to not overbake!)

Cool slightly and then place on cooling racks.


Now eat up!

Chocolate Mug Cake

I am a lady who loves my chocolate. And let's be honest....I am not the only one! There are some nights where all I want is some ooey gooey chocolate. This mug cake is delicious and super duper easy. All of the ingredients are pantry staples and only takes a minute 20 to bake in the microwave.

Alright...let's make some chocolate cake!
Dry Ingredients 


 Incorporating and mixing well dry and wet ingredients

Ingredients:

1/4 c. flour
1/4 c. sugar
2 TB cocoa powder
1/4 tsp salt
1 tsp. vanilla
2 TB oil (vegetable or canola..if I have some in the cupboard I like to use coconut oil)
3 TB water


Mix dry ingredients in mug and then add in and mix wet ingredients.
Microwave for 1:20. More if you like it all the way done or less if you like it a little gooey in the center (I usually do mine for 1:15 and I think it's perfect)

Easiest Cobbler Recipe Ever

We were having some of the youth mentors over to our house for one of our monthly meetings. I had been so focused on dinner all day (not to mention, my forgetfulness because of my pregnancy brain), I completely forgot about dessert. I had originally thought to make an apple tart, but quickly nixed that idea when I realized I didn't have enough apples and whenever I have to make a crust I also make a huge mess and I had literally just cleaned the kitchen that morning (which is a big deal when your pregnant and exhausted). 

I looked in my freezer and saw that I had a package of frozen mixed berries from Sprouts!!! Cobbler Time!!! Cobbler is one of my favorites to begin with but I recently came across the Pioneer Woman's Blackberry Cobbler. It is oh so simple (like really really really simple!). It just amazes me how easy this cobbler is to make and how delicious it is!  I have used this recipe with just blackberries before, apricots, peaches and now a frozen mixed berry mix. 


So find 2 cups of fruit and lets make some dessert!!!!


Ingredients:

1 stick butter
1 1/4 cup sugar
1 cup flour (All Purpose)
1 cup milk
2 cups fruit (fresh or frozen)



Preheat oven to 350.
Melt butter in a small bowl
Combine and mix 1 cup sugar and flour. Whisk in the milk and the butter.
Pour mixture into a buttered baking dish (I like using either an 8x8 or 7x11 glass dish)
Sprinkle your fruit evenly over mixture. Top with 1/4 cup sugar and bake for 50-60 minutes!

Cool for at least 10 minutes. And serve with some vanilla ice cream :)


How simple is that. Next time you want to make a dessert but don't really want to "do" anything, whip this yummy deliciousness together and enjoy!

Boston Cream Pies

One of my favorite things to bake is dessert! Of course...whose isn't?! Unless the answer is breakfast, please don't answer that. I found this recipe in a fun little cookbook about Jello and Cool Whip. I have no idea how I got it, or why I got it (not a huge fan of jello), but this recipe has become one of my favorites to not only devour but to make!!! It can be as simple as you want to make it! Trust me! 

The only thing about this recipe is that it does take time and a couple items that I usually don't have in my cupboards, like: instant vanilla pudding, cool whip, baking chocolate squares and yellow cake mix. Surprise...I have yet to make these little Bostons from scratch (making the cake from not a box!!!). Oh well....life has been busy and I am making these for my husbands birthday this week! We are bringing them to youth group to share with the children and also he is going to bring some at the end of the week to work. This is one of his favorite recipes, which is probably why he requested it for his birthday! 


Ingredients:
Yellow cake mix (or you can be super cool and make it from scratch)
1 cup cold milk
4 oz box instant vanilla pudding
1 1/2 cups cool whip, divided (a little bit thawed helps too)
4 squares of semi sweet baking chocolate

Now let's bake:

Prepare the cake mix as you would according to the directions for cupcakes (these can be made either regular size or mini). After they are baked, cool in pans for about 10 minutes and then transfer to a wire cooling rack until completely cooled. 

While your cute little cupcakes are cooling, combine your pudding and 1 cup cold milk and whisk! Let sit for about 10 minutes. 

After your cupcakes are cooled, next you need to cut them in half. It helps to use a serrated knife!

Once all of the muffins are sliced in half, add 1/2 cup of the cool whip to your pudding mixture and stir in until all combined. Then spread on that mixture evenly over all of the bottom cupcake pieces and top with cupcake tops! 
*I have always had extra of the cream mixture afterwards, so don't be afraid to pile these guys high with the pudding goodness. 
Once all of the cupcakes have their pudding filling and have their hats on, microwave in a small bowl the chocolate and the 1 cup of cool whip for a minute. Your chocolate won't be completely melted but stir stir stir quickly and it will finish melting and combine with the cool whip. Let sit for 5 minutes to harden a bit. 

Next, frost your Boston Cream Pies and refrigerate for at least 15 minutes. 
These are best served cold!

Pumpkin Chocolate Chip Loaf

I have been dying for something pumpkin lately and although I do love me some pumpkin pie, my husband on the other hand is not the biggest fan. Therefore, I figured I would make him some bread that he can have for breakfast or even for a snack when he works from home on occasion (he loves that it has chocolate chips in it)!

This Pumpkin Chocolate Chip Loaf Bread (known as Harvest Bread to my husband) is super easy to make and besides the pumpkin, I had everything else on hand (which you all know I love). This bread is perfect for the Autumn season and will really satisfy your pumpkin craving!

Pumpkin Chocolate Chip Loaf

1 2/3 cup flour

1 cup sugar
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 cup pumpkin puree (keep in mind this is not the same as pumpkin pie mix)
3 eggs
1 teaspoon vanilla
1/4 cup sour cream
3/4 cup vegetable oil
1 cup chocolate chips (plus some for topping)


1. Preheat oven to 350 degrees and grease a loaf pan.
2. Combine flour, sugar, salt, baking powder and baking soda in a large bowl.
3. In a medium bowl combine pumpkin, eggs, vanilla, sour cream and oil until smooth.
4. Pour wet ingredients into flour mixture, whisking together until combined.
5. Pour mixture into greased pan, topping with chocolate chips.
6. Bake for about 70 minutes, or until an inserted toothpick comes out clean.
7. Leave in pan, cooling on wire rack for about 20 minutes. Then pop out loaf from pan and cool for another 10 minutes or so on a wire rack.
8. Stuff your face and enjoy!

Mama's Chai

This is my Mama's recipe (of course she would say, "now you know its not really a recipe) and I love it. For the longest time she was the only keeper of this recipe (I guess I never asked for it either) until just recently when I asked her how she makes her Chai. This is my somewhat "guilty" pleasure when I come home from work. I believe this recipe is pretty darn close to the tastiness of Starbucks' Chai. Do not make the mistake of calling this Chai tea.

Just a little side note: my husband made this very clear to me that Chai = tea in swahili, therefore you are walking around saying "tea tea". Okay, anyways...here we go:


You will need:
-one Chai "tea" bag
- 2 Tablespoons heaping sugar (more or less depending on your taste)
-half a glass of milk
-half a glass of water
*optional: whipped topping

Step 1: Scoop two heaping tablespoons of sugar into your pot. Next add your tea bag.

Step 2: Fill whatever mug size you like half full of water, then milk. Pour into pot, turn stove on high, stirring frequently.

Step 3: Once mixture becomes frothy and just beginning to boil, quickly take off heat (be careful that your liquid does not bubble over your pot and make a huge mess) and carefully pour back into mug. *Top with whipped topping if desired.
