Roasted Brussels Sprouts with Goat Cheese & Candied Pecans

Do y'all like Brussels sprouts? I love them, but for some reason not many people care for them! Topped with gobs of goat cheese and candied pecans, this recipe will have even the most anti-vegetable eater asking for seconds. 

Ingredients 
Brussels sprouts - I used a 12 ounce bag of washed and trimmed Brussels sprouts
Salt
Pepper
Olive Oil
Goat Cheese - I used pesto flavored goat cheese
Candied Pecans


 
 This is one of those "to taste" recipes, where the quantity of ingredients is really up to you!

Start off by washing and trimming the ends of your brussels sprouts if you didn't buy a bag of already prepped sprouts.  

Preheat the oven to 350 degrees. 

Place the sprouts in a mixing bowl. Drizzle with olive oil, coating each individual Brussels sprout with oil. Sprinkle with salt and pepper to taste. 




Spray your cookie sheet with cooking spray and place the sprouts on the cookie sheet. 

Bake for 40 minutes, turning them at the halfway mark. Your Brussels Sprouts should be a nice golden brown, caramelized color. 

Place them in a bowl and top generously with goat cheese and candied pecans!
